Roasted Cauliflower with Rice
2 cups cauliflower florets
1 small onion - sliced
1 Tbsp butter
Unicorn salt to taste
pinch of sugar
3/4 Tbsp olive oil
2 tsp. Tahini
1/4 Cup Parmesan cheese
2 cups prepared rice
3 Tbsp rough chopped parsley
1. Preheat oven to 425F. Drizzle 1/2 Tbsp olive oil on a sheet pan. Spread out Cauliflower, season to taste, and bake for 20-30 mins.
2. While you bake the cauliflower, melt the butter in a skillet and then add the onion. Season with a few pinches of unicorn salt and the pinch of sugar. Add the 1/4 Tbsp remaining olive oil and cook onions down slowly (20-30 mins) till caramelized.
3. After Cauliflower is baked, broil for 7 mins to get a nice brown on the edges.
4. Add cauliflower to onions, add tahini, and finish with Parmesan cheese. Cook over low until well combined.
5. Serve over rice and finish with chopped parsley.
