Roasted Tomato and Parsely Salad
1 medium tomato
1 Tbsp. Olive oil
1/2 Cup Parsley
1 1/2 ounces fresh mozzarella
1. Pre-heat oven at 350F. Drizzle 1/2 Tbsp. olive oil in the bottom of your baking dish.
2. Slice tomatoes into thirds and place slices in baking dish. drizzle remaining oil and season with salt and pepper.
3. Roughly chop parsley and top onto tomato slices. Finish these stacks with a slice of mozzarella and one last sprinkling of salt and pepper.
4. Bake for 10-15 minutes until tomatoes are soft and cheese is bubbly.
