Salmon Lettuce Wraps
1 Small filet of Salmon, about 8 oz.
.25 Cup of onion
.25 shallot
1 TBSP Boursin Shallot and Chive cheese
1.5 TBSP Lemonaise
1 TBSP diced olives
3 Thickly sliced pieces of bacon
3-4 butter lettuce leaves
1. Finely dice the shallot and onion, while heating a skillet with a tablespoon of olive oil.
2. Saute the salmon filet and add the onion & shallots. Cook until salmon is done and onions are tender. Remove from heat and rest till room temperature.
3. Cook bacon. While bacon is cooking shred Salmon with a fork and combine it with onion, shallot, cheese, lemonaise, and olives. Season to taste if needed.
4. Dollop Salmon mixture onto leaves, top with bacon pieces, and wrap it up!
*This salad mixture can be enjoyed at room temperature or chilled. The addition of diced tomatoes would be lovely as well.
